1,5 L Gemüsesuppe
1 EL Polenta
2 Lorbeerblätter
1 Sojajogurt oder ähnliches (Thahin, Mandelmus und etwas Essig, Hafercreme, Reiscreme etc.)
Frische Petersilie
Etwas Dille
Etwas Sonnenblumen-, Raps- oder Distelöl
Zubereitung
Gemüse waschen, Erdäpfel schälen und alles klein würfeln.
Einen Topf mit Öl erhitzen und das Gemüse anrösten, mit der heißen Gemüsesuppe aufgießen, Polenta unterrühren und die Lorbeerblätter hinzugeben.
Alles ca. 20-30 Minuten köcheln lassen.
Zum Schluss das Sojajogurt und die frisch gehackte Petersilie und Dille unterrühren.
