Kartoffelnockerl mit Pfirsich/Marillensauce und Knäckebrotbrösel
Heute hatte ich Gusto auf eine Art Topfennockerl.. Topfen mag ich aber nicht verwenden, somit habe ich improvisiert.
Kartoffelteig mit Gries, Mehl, 1 Dotter, vegane Creme und etwas Salz.
Zuerst die Kartoffel gedämpft, dann mit Grieß, Mehl, 1 Dotter, 1 EL vegane Creme und einer Prise Salz vermischt und im Thermomix gedämpft.
Da wir keine Brösel und auch kein hartes Brot etc. hatten, haben wir Knäckebrot mit etwas dunklem Zucker püriert und in etwas Butter angeröstet. Darin dann die Knödel gewendet und schon ist es fertig.
Wir hatten noch 2 Pfirsiche, die haben wir mit etwas gekochtem Reis, gekochter Hirse, Marillenmarmelade und Hafer-Vanillemilch aufgekocht und püriert.
