Zutaten
1 kg süße Birnen
4-5 EL Kuzu oder
1-2 EL Pfeilwurzelmehl oder
Etwas Lavendelblüten (1 TL)
etwas Minze (1/2 TL oder ein paar Blätter)
½ L Wasser
Zitronenschale, Saft einer halben Zitrone
Zubereitung
Je nach Sorte der Birnen: schälen und in Stücke schneiden.
Das Wasser zum Kochen bringen, Zitronensaft, Zitronenschale und Bockhornkleesamen dazugeben, anschließend die Birnen in das Wasser geben. Die Gewürze in ein Teesackerl geben und einige Minuten mitköcheln lassen.
Kuzu/Pfeilwurzelmehl in kaltem Wasser auflösen, Gewürze herausnehmen und Kuzu/etc. zum Kompott geben – nur kurz aufkochen. Anschließend pürieren und in einer Schüssel in das Gefrierfach. Kurz vor dem Servieren durchmixen – ev. mit etwas Flüssigkeit oder Mandelmus.
